Take a Tour of the Olive Press at Foxdale Farm


At Foxdale Farm, we are proud of having the latest and the best olive pressing equipment. We pride ourselves on keeping a clean, orderly building and equipment. Our staff is knowledgeable and friendly.

Olives, of varying ripeness, are collected into a bin. The proportion of ripe to green olives varies with the farm, and the farmer's taste. Green olives give a more pungent, bitter, and robust flavor. Ripe olives add fruity or buttery qualities to an oil.

Unloading the bin of freshly picked olives into the hopper, which is attached to the washer. Here the olives begin there journey on the way to becoming oil.

This is the conveyor that takes the olives to the deleafer.

Olives from the deleafer go to be washed.


Washed olives travel by conveyor to the hammermill where they will be crushed.


Next the olives go into the malaxor. Here the crushed olives are heated and mixed into a thick paste. The oil begins to separate from the solids.

Olive paste is mixed in the malaxor.

Paste goes from the malaxor into the decanter, where the liquids separate from the solids.

The liquids, water and oil, enter the separator and the finsihed oil is captured for bottling.
